Day 5

 Its off to the pool and beach again. I love the summer, swimming, playing in the ocean. It does renew me, helps me face the rest of my crazy life.
I am a creature of habit. I like to eat all 3 meals, usually the same for breakfast and lunch, only variation is dinner and dessert.  Tuesday mornings on the way home from work I usually stop at hardees or sonic for a biscuit or French toast sticks. It helps me stay awake on the way home. Lunch is usually a sandwich,  chips, and applesauce. 
Today, we put a roast in the crockpot with potatoes,  carrots, onions,  and celery. Corn on the Cobb and for dessert coconut lime pie. Yum-o! then off to the pool and beach we went. Lazy river, pool, laying out reading my book (the lost symbol by Dan brown ), the ocean, back to the lazy river,  pool, chilling with the hubby, back to the ocean...throw in a couple of pina colads...I am definitely a happy camper. Don't forget the crossword puzzle,  great friends and fabulous weather...sometimes I feel like I lead a charmed life.
coconut lime pie
Box of coconut pudding mix
zest of one lime
Milk
Vanilla
1 cooked pie crust
Heavy whipping cream
Pinch of sugar
Empty pudding mix in mixing bowl, add 1 3/4 cup milk, zest of lime, and teaspoon of vanilla.  Mix and pour into pie crust.
Set in fridge for 1 hour, make whipped cream by mixing cream, vanilla, and sugar with electric mixer until Stiff. Cover pie with whipped cream and let sit another hour. Enjoy.
